Nostalgic eats and frozen treats

Koselig Kitchen (pronounced koosh-lee) is a Spokane area based kitchen that is focused on bringing nostalgic eats and frozen treats to farmers markets, parties, birthdays, weddings and any special event in the greater Spokane and Northern Idaho area.  Some items will be available for purchase and shipping nationwide (Coming Soon).

 

Chef Renée Bolstad's earliest memories have been in the kitchen, either chopping up mushrooms at three while her dad mimicked the Swedish Chef from the Muppets, or baking Norwegian treats with her grandma and cousin at Christmas time.  Koselig is a word she learned later, but felt everyday at her grandmother's house growing up.  It is a Norwegian way of life where coziness meets happiness. 

 

After working in highly technical fields and attending The Art Institute for graphic design, Chef Renée realized she wanted to run her own food business.  When the market crashed in 2008, she was laid-off, she eventually found her way to The French Culinary Institute in New York City, one of the best culinary educations in the country.  Chef Renée went on to sharpen her skills in high volume, fast-paced, Four-Star and Michelin star kitchens such as Jean-Georges Vongerichten's Spice Market, A Voce and the Altamarea Group in New York City. 

 

When moving home to Seattle, Chef Renée became the pastry chef for all of James Beard nominated chef Rachel Yang's restaurants Revel, Joule and Trove.  In five years, Chef Renée built one of the most successful pastry programs in the city. Her desserts were featured in many publications locally, nationally and internationally, including in Rachel's cookbook My Rice Bowl, best cheesecakes in America (October 2015) and a retro dessert page(December 2018) in Food & Wine magazine. 

 

When the pandemic hit, Chef Renée's most recent pastry program for The Chef In The Hat, Thierry Rautureau at Loulay Kitchen & Bar had come to end.  She packed up her bags and moved to Newport, Washington to start her own business.

 

Chef Renée hopes to bring a little koselig into every bite to transport you to a memory of running up to an ice cream truck or getting a snack from grandma.  Koselig Kitchen will bring experience in big, bold flavors, classic techniques and childhood memories of nostalgic eats and frozen treats.
